Homemade Linguine Aglio Oatlio
Ingredients

For dough:

  • 100g Quaker instant oatmeal
  • 100g all purpose flour
  • 2 eggs
  • 2 tablespoons extra virgin olive oil

 

For pasta:

  • 6 tablespoons extra virgin olive oil
  • 10 cloves of garlic, finely sliced
  • Salt and pepper for seasoning
  • Parmesan cheese for topping (optional)
Procedure
  1. Add the instant oatmeal into a blender and blend until it has the consistency of flour
  2. Combine the oatmeal flour and all purpose flour and create a mound on the work surface with a well in the middle
  3. Add eggs and olive oil to the well and slowly incorporate, forming a rough dough
  4. Knead the dough until a smooth dough
  5. Set the dough aside in a bowl and cover for 30 minutes
  6. Roll the dough flat using a rolling pin and feed it through a pasta machine set for linguine
  7. Cook pasta in boiling salted water for 4 minutes
  8. Drain and set aside
  9. To a saucepan, add olive oil and garlic and cook at low heat for 3 minutes
  10. Add drained pasta and toss, adding pasta water as necessary if too dry
  11. Season with salt and pepper and top with grated parmesan cheese
