Oat + Cereal Milk Ice Cream
Ingredients
  • 1 cup low fat milk
  • 1.5 cups water
  • 50g Quaker Quickcook Oatmeal
  • 3 cups cornflakes
  • 1.5 cups cream
  • 0.5 cup brown sugar
  • 0.5 teaspoon sea salt
  • 4 egg yolks
  • 1 teaspoon vanilla extract
Procedure
  1. Toast cornflakes in oven at 150 C for 10 minutes
  2. Combine the oatmeal and water into a blender and blend at high speed for 2 minutes
  3. Strain mixture over a fine sieve, and add low fat milk to strained mixture
  4. Add cornflakes to combined milk mixture and steep for 15 minutes, then strain out the cornflakes
  5. In a small pot, add strained milk mixture, cream, sugar and salt and heat at low heat for 5 minutes, stirring constantly
  6. In a separate bowl, whisk the egg yolks and slowly add a splash of the warmed milk mixture and whisk, then pour the eggs back into the pot and cook at medium heat for another 3 minutes
  7. Strain mixture and chill in fridge for 4 hours
  8. Churn mixture in ice cream machine
